Ingredients
- 1 cup Quinoa
- 2 cups Water
- 1 cup Fresh Blueberries
- 1 teaspoon Turmeric Powder
- 0.5 teaspoon Ground Cinnamon
- 0.25 teaspoon Ground Ginger
- 0.5 cup Walnuts
- 0.5 medium Avocado
- 1 tablespoon Lemon Juice
- 1 tablespoon Olive Oil
- pinch Salt pinch Salt
- pinch Black Pepper
Instructions
- Cook quinoa according to package directions. Fluff with a fork and set aside.
- In a small bowl, whisk together turmeric, cinnamon, ginger, salt, and pepper.
- In a separate bowl, gently toss blueberries with lemon juice and olive oil.
- Combine cooked quinoa, turmeric spice blend, blueberries, walnuts, and avocado in a large bowl.
- Gently mix to combine all ingredients.
- Serve immediately or chill for later.
