- 1 cup Quinoa
- 1 medium Cucumber
- 1 cup Cherry Tomatoes
- 0.5 medium Red Onion
- 0.5 cup Kalamata Olives
- 0.25 cup Feta Cheese
- 0.25 cup Fresh Parsley
- 0.25 cup Fresh Mint
- 1 Lemon 1 Lemon
- 2 tablespoons Olive Oil
- 1 clove Garlic
- to taste Salt
- to taste Black Pepper
Instructions
- Cook quinoa according to package directions.
- While quinoa cooks, prepare the dressing: Whisk together lemon juice, olive oil, minced garlic, salt, and pepper.
- Combine cooked quinoa, cucumber, cherry tomatoes, red onion, olives, parsley, and mint in a large bowl.
- Pour dressing over the quinoa mixture and toss gently to combine.
- Serve immediately, topped with crumbled feta cheese (if using).
