Lemon Herb Baked Cod with Asparagus and Cherry Tomatoes

Ingredients

  • 2 Cod fillets
  • 1 bunch Asparagus
  • 1 pint Cherry tomatoes
  • 1 Lemon 1 Lemon
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Fresh dill
  • 2 cloves Garlic
  • 1 tablespoon Olive oil
  • To taste Salt
  • To taste Black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss asparagus and cherry tomatoes with olive oil, lemon zest, minced garlic, salt, and pepper.
  3. Place asparagus and tomato mixture in a baking dish.
  4. Place cod fillets on top of the vegetables.
  5. Drizzle cod with lemon juice and sprinkle with fresh parsley and dill.
