Lemon Herb Roasted Salmon with Asparagus and Cherry Tomatoes

Ingredients

  • 2 Salmon fillets
  • 1 bunch Asparagus
  • 1 pint Cherry tomatoes
  • 1 Lemon 1 Lemon
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Fresh dill
  • 2 cloves Garlic
  • 2 tablespoons Olive oil
  • to taste Black pepper
  • a pinch Red pepper flakes

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and trim asparagus. Halve cherry tomatoes.
  3. In a bowl, combine asparagus, cherry tomatoes, lemon zest, lemon juice, parsley, dill, garlic, olive oil, black pepper, and red pepper flakes (if using). Toss gently to coat.
  4. Place salmon fillets on a baking sheet lined with parchment paper. Season with black pepper.
