Lemon Herb Roasted Salmon with Asparagus and Cherry Tomatoes

Ingredients
- 2 Salmon fillets
- 1 bunch Asparagus
- 1 pint Cherry tomatoes
- 1 Lemon 1 Lemon
- 2 tablespoons Fresh parsley
- 1 tablespoon Fresh dill
- 2 cloves Garlic
- 2 tablespoons Olive oil
- to taste Black pepper
- a pinch Red pepper flakes
Instructions
- Preheat oven to 400°F (200°C).
- Wash and trim asparagus. Halve cherry tomatoes.
- In a bowl, combine asparagus, cherry tomatoes, lemon zest, lemon juice, parsley, dill, garlic, olive oil, black pepper, and red pepper flakes (if using). Toss gently to coat.
- Place salmon fillets on a baking sheet lined with parchment paper. Season with black pepper.
- Pour the vegetable mixture around the salmon fillets.
- Roast for 12-15 minutes, or until salmon is cooked through and vegetables are tender.
