- 2 Cod fillets
- 1 bunch Asparagus
- 1 Lemon 1 Lemon
- 2 tablespoons Fresh Parsley
- 1 tablespoon Fresh Dill
- 2 cloves Garlic
- 1 tablespoon Olive Oil
- 1/4 teaspoon Black Pepper
- 1/4 teaspoon Salt
- 1 cup Cherry Tomatoes
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, whisk together lemon juice, lemon zest, parsley, dill, garlic, olive oil, pepper, and salt.
- Place cod fillets in a baking dish and pour the lemon herb mixture over them, ensuring they are coated.
- Toss asparagus with a small amount of olive oil, salt, and pepper.
- Arrange asparagus and cherry tomatoes around the cod in the baking dish.
- Bake for 12-15 minutes, or until cod is cooked through and asparagus is tender-crisp.
