Mediterranean Lemon Herb Baked Salmon with Asparagus & Cherry Tomatoes

Ingredients
- 2 Salmon fillets
- 1 bunch Asparagus
- 1 pint Cherry tomatoes
- 1 Lemon 1 Lemon
- 2 tablespoons Olive oil
- 2 cloves Garlic
- 1 teaspoon Dried oregano
- 1 teaspoon Dried basil
- to taste Salt
- to taste Black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Wash and trim asparagus. Halve cherry tomatoes.
- In a bowl, whisk together olive oil, minced garlic, oregano, basil, salt, and pepper.
- Place asparagus and cherry tomatoes on a baking sheet.
- Place salmon fillets on top of vegetables. Drizzle with the herb and garlic mixture, and squeeze fresh lemon juice over the salmon and vegetables.
- Bake for 12-15 minutes, or until salmon is cooked through and vegetables are tender.
- Serve immediately.
