- 2 each Cod fillets
- 3 cup Vegetable broth
- 1 whole Lemon
- 1 each Garlic clove
- 1 can Canned chickpeas
- 0.5 cup Cucumber
- 0.5 cup Cherry tomatoes
- 0.5 cup Red bell pepper
- 2 tablespoon Red onion
- 0.25 cup Fresh parsley
- 2 tablespoon Fresh mint
- 1 tablespoon Fresh dill
- 1 tablespoon Red wine vinegar
- 0.25 teaspoon Salt
- 0.125 teaspoon Black pepper
Instructions
- Prepare the Chickpea & Herb Salad: In a medium bowl, combine the rinsed and drained chickpeas, diced cucumber, halved cherry tomatoes, diced red bell pepper, finely diced red onion, chopped parsley, chopped mint, and chopped dill.
- Make the Dressing: In a small bowl, whisk together the juice from half a lemon, minced garlic, red wine vinegar, salt, and black pepper. Pour the dressing over the chickpea salad and toss gently to combine. Set aside to let the flavors meld.
- Poach the Cod: In a large, shallow pan or skillet, add the vegetable broth and the remaining half lemon, sliced. Bring the broth to a gentle simmer over medium heat. Do not let it boil vigorously.
- Gently place the cod fillets into the simmering broth. Ensure they are mostly submerged. Reduce the heat to low, cover the pan, and poach for 6-8 minutes, or until the fish is opaque and flakes easily with a fork. Cooking time may vary based on fillet thickness.
- Carefully remove the poached cod fillets from the broth using a slotted spatula. Serve each cod fillet immediately, placing it on a generous bed of the Mediterranean Chickpea & Herb Salad.
