Ingredients
- 1 cup Quinoa
- 1 can Chickpeas
- 1 medium Cucumber
- 1 cup Cherry Tomatoes
- 0.5 medium Red Onion
- 0.25 cup Fresh Parsley
- 0.25 cup Fresh Mint
- 1 Lemon 1 Lemon
- 2 tablespoons Olive Oil
- 0.5 teaspoon Sea Salt
- 0.25 teaspoon Black Pepper
Instructions
- Cook quinoa according to package directions. Fluff with a fork and let cool.
- In a large bowl, combine cooked quinoa, chickpeas, cucumber, cherry tomatoes, red onion, parsley, and mint.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
- Pour dressing over the quinoa mixture and toss gently to combine.
- Serve immediately or chill for later. Garnish with extra herbs if desired.
