Mediterranean Quinoa Bowl with Lemon-Herb Baked Salmon

Ingredients

  • 2 Salmon fillets
  • 1 cup Quinoa
  • 1 cup Cherry tomatoes
  • 0.5 medium Cucumber
  • 0.25 medium Red onion
  • 0.5 cup Kalamata olives
  • 0.25 cup Fresh parsley
  • 0.25 cup Fresh dill
  • 1 Lemon 1 Lemon
  • 2 tablespoons Olive oil
  • 1 clove Garlic
  • to taste Salt
  • to taste Black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse quinoa and cook according to package directions.
  3. In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper.
  4. Place salmon fillets on a baking sheet lined with parchment paper. Brush with lemon-herb mixture.
  5. Bake salmon for 12-15 minutes, or until cooked through.
