Ingredients
- 2 Salmon fillets
- 1 cup Quinoa
- 1 cup Cherry tomatoes
- 0.5 medium Cucumber
- 0.25 medium Red onion
- 0.5 cup Kalamata olives
- 0.25 cup Fresh parsley
- 0.25 cup Fresh dill
- 1 Lemon 1 Lemon
- 2 tablespoons Olive oil
- 1 clove Garlic
- to taste Salt
- to taste Black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Rinse quinoa and cook according to package directions.
- In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper.
- Place salmon fillets on a baking sheet lined with parchment paper. Brush with lemon-herb mixture.
- Bake salmon for 12-15 minutes, or until cooked through.
- While salmon bakes, combine cooked quinoa, cherry tomatoes, cucumber, red onion, olives, parsley, and dill in a large bowl.
- Flake cooked salmon and gently stir into the quinoa mixture.
- Serve immediately.
