Mediterranean Quinoa Bowl with Lemon-Herb Salmon

Ingredients
- 2 pieces Salmon fillets
- 1 cup Quinoa
- 1 cup Cherry tomatoes
- 0.5 cup Cucumber
- 0.25 cup Red onion
- 0.5 cup Kalamata olives
- 0.25 cup Fresh parsley
- 0.25 cup Fresh dill
- 1 piece Lemon
- 2 tablespoons Olive oil
- 2 cloves Garlic
- to taste Sea salt
- to taste Black pepper
Instructions
- Rinse quinoa and cook according to package directions.
- Preheat oven to 400°F (200°C).
- In a bowl, combine lemon zest, lemon juice, olive oil, minced garlic, salt, and pepper. Marinate salmon in this mixture for 10 minutes.
- Place salmon on a baking sheet and bake for 12-15 minutes, or until cooked through.
- While salmon bakes, combine cooked quinoa, cherry tomatoes, cucumber, red onion, olives, parsley, and dill in a large bowl.
- Flake cooked salmon and add it to the quinoa mixture. Toss gently to combine.
- Serve immediately.
