Mediterranean Quinoa Bowl with Lemon-Herb Salmon

Ingredients

  • 2 pieces Salmon fillets
  • 1 cup Quinoa
  • 1 cup Cherry tomatoes
  • 0.5 cup Cucumber
  • 0.25 cup Red onion
  • 0.5 cup Kalamata olives
  • 0.25 cup Fresh parsley
  • 0.25 cup Fresh dill
  • 1 piece Lemon
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • to taste Sea salt
  • to taste Black pepper

Instructions

  1. Rinse quinoa and cook according to package directions.
  2. Preheat oven to 400°F (200°C).
  3. In a bowl, combine lemon zest, lemon juice, olive oil, minced garlic, salt, and pepper. Marinate salmon in this mixture for 10 minutes.
  4. Place salmon on a baking sheet and bake for 12-15 minutes, or until cooked through.
  5. While salmon bakes, combine cooked quinoa, cherry tomatoes, cucumber, red onion, olives, parsley, and dill in a large bowl.
  6. Flake cooked salmon and add it to the quinoa mixture. Toss gently to combine.
  7. Serve immediately.
