Mediterranean Quinoa Salad with Lemon-Herb Dressing

Ingredients
- 1 cup Quinoa
- 1 medium Cucumber
- 1 cup Cherry Tomatoes
- 0.5 small Red Onion
- 0.5 cup Kalamata Olives
- 0.5 cup Feta Cheese
- 0.25 cup Fresh Parsley
- 0.25 cup Fresh Mint
- 2 tablespoons Lemon Juice
- 2 tablespoons Olive Oil
- 1 clove Garlic
- 0.5 teaspoon Ground Cumin
- to taste Salt
- to taste Black Pepper
Instructions
- Cook quinoa according to package directions.
- While quinoa cooks, combine cucumber, tomatoes, red onion, olives, parsley, and mint in a large bowl.
- In a small bowl, whisk together lemon juice, olive oil, minced garlic, cumin, salt, and pepper.
- Add cooked quinoa to the bowl with vegetables.
- Pour dressing over the quinoa and vegetable mixture. Toss gently to combine.
- Stir in crumbled feta cheese.
- Serve immediately or chill for later.
