Mediterranean Salmon with Burst Cherry Tomatoes & Charred Asparagus

Ingredients

  • 2 Salmon fillets
  • 1 bunch Asparagus
  • 1 pint Cherry tomatoes
  • 0.5 Red onion
  • 2 tablespoons Olive oil
  • 1 Lemon 1 Lemon
  • 2 cloves Garlic
  • 1 teaspoon Dried oregano
  • to taste Salt
  • to taste Black pepper
  • 0.25 cup Fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss asparagus and cherry tomatoes with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet.
  3. In a small bowl, combine remaining olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
  4. Place salmon fillets on the same baking sheet with the vegetables. Drizzle with the lemon-garlic mixture.
  5. Roast for 12-15 minutes, or until salmon is cooked through and vegetables are tender.
  6. Garnish with fresh parsley and serve immediately.
