Mediterranean Salmon with Burst Cherry Tomatoes & Charred Asparagus

Ingredients
- 2 Salmon fillets
- 1 bunch Asparagus
- 1 pint Cherry tomatoes
- 0.5 Red onion
- 2 tablespoons Olive oil
- 1 Lemon 1 Lemon
- 2 cloves Garlic
- 1 teaspoon Dried oregano
- to taste Salt
- to taste Black pepper
- 0.25 cup Fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- Toss asparagus and cherry tomatoes with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet.
- In a small bowl, combine remaining olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
- Place salmon fillets on the same baking sheet with the vegetables. Drizzle with the lemon-garlic mixture.
- Roast for 12-15 minutes, or until salmon is cooked through and vegetables are tender.
- Garnish with fresh parsley and serve immediately.
