Ingredients

  • 2 Salmon fillets
  • 1 medium Sweet potatoes
  • 1 cup Broccoli florets
  • 2 tablespoons White miso paste
  • 1 tablespoon Mirin
  • 1 tablespoon Soy sauce (tamari for gluten-free)
  • 1 teaspoon Sesame oil
  • 1 teaspoon Ginger
  • 1 clove Garlic
  • 1 tablespoon Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes and broccoli with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
  2. While vegetables roast, whisk together miso paste, mirin, soy sauce, sesame oil, ginger, and garlic in a small bowl.
  3. Heat a large skillet over medium-high heat. Add salmon fillets and cook for 3-4 minutes per side, or until cooked through.
  4. During the last minute of cooking, brush salmon with miso glaze.
  5. Serve salmon over roasted sweet potatoes and broccoli.
