Miso-Glazed Salmon with Roasted Sweet Potatoes and Broccoli

- 2 Salmon fillets
- 1 medium Sweet potatoes
- 1 cup Broccoli florets
- 2 tablespoons White miso paste
- 1 tablespoon Mirin
- 1 tablespoon Soy sauce (tamari for gluten-free)
- 1 teaspoon Sesame oil
- 1 teaspoon Ginger
- 1 clove Garlic
- 1 tablespoon Olive oil
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potatoes and broccoli with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
- While vegetables roast, whisk together miso paste, mirin, soy sauce, sesame oil, ginger, and garlic in a small bowl.
- Heat a large skillet over medium-high heat. Add salmon fillets and cook for 3-4 minutes per side, or until cooked through.
- During the last minute of cooking, brush salmon with miso glaze.
- Serve salmon over roasted sweet potatoes and broccoli.
