Saffron-Infused Salmon with Turmeric Roasted Broccoli & Quinoa

- 2 Salmon fillets
- 1 cup Quinoa
- 1 large head Broccoli florets
- 2 tablespoons Olive oil
- 1 teaspoon Turmeric powder
- 1 teaspoon Garlic powder
- 0.5 teaspoon Salt
- 0.25 teaspoon Black pepper
- 0.25 gram Saffron threads
- 1.5 cups Chicken broth
- 1 tablespoon Lemon juice
- 2 tablespoons Fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- Cook quinoa according to package directions.
- Toss broccoli florets with 1 tablespoon olive oil, turmeric, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 20 minutes, or until tender-crisp.
- While broccoli roasts, heat remaining olive oil in an oven-safe skillet over medium heat. Add salmon fillets and cook for 2-3 minutes per side, until lightly browned.
- Sprinkle saffron threads over salmon. Pour chicken broth into the skillet. Transfer the skillet to the oven and bake for 8-10 minutes, or until salmon is cooked through.
- Stir lemon juice into the cooking liquid. Serve salmon over quinoa, topped with roasted broccoli and fresh parsley.
