Ingredients

  • 2 Salmon fillets
  • 1 cup Quinoa
  • 1 large head Broccoli florets
  • 2 tablespoons Olive oil
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 gram Saffron threads
  • 1.5 cups Chicken broth
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cook quinoa according to package directions.
  3. Toss broccoli florets with 1 tablespoon olive oil, turmeric, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 20 minutes, or until tender-crisp.
  4. While broccoli roasts, heat remaining olive oil in an oven-safe skillet over medium heat. Add salmon fillets and cook for 2-3 minutes per side, until lightly browned.
  5. Sprinkle saffron threads over salmon. Pour chicken broth into the skillet. Transfer the skillet to the oven and bake for 8-10 minutes, or until salmon is cooked through.
  6. Stir lemon juice into the cooking liquid. Serve salmon over quinoa, topped with roasted broccoli and fresh parsley.
