- 1 cup Instant Quinoa
- 1.5 cups Water
- 1 can Canned Black Beans
- 1 can Canned Corn
- 1 can Canned Diced Tomatoes with Green Chiles (Rotel)
- 1/2 pepper Chipotle in Adobo Sauce
- 1 whole Lime
- 1/4 cup Fresh Cilantro
- 1 medium Avocado
- 1/4 tsp Salt
- 1/8 tsp Black Pepper
- 1/4 cup Tortilla Chips
Instructions
- Prepare Quinoa: In a microwave-safe bowl, combine instant quinoa and water. Microwave on high for 2-3 minutes, or until water is absorbed. Fluff with a fork and set aside. (Alternatively, boil water in an electric kettle, pour over quinoa, cover, and let sit for 5 minutes).
- Combine Bowl Ingredients: In a large mixing bowl, combine the thoroughly rinsed black beans, drained corn, and the entire can of diced tomatoes with green chiles (undrained).
- Add Flavor: Finely mince the chipotle pepper and add it to the bowl along with the adobo sauce. Squeeze in the juice from the entire lime. Add salt and pepper.
- Mix and Serve: Stir all ingredients in the large bowl until well combined. Add the cooked quinoa to the bowl and gently mix.
- Garnish: Divide the mixture into two serving bowls. Top each with diced avocado, chopped fresh cilantro (if using), and crushed tortilla chips (if using) for extra crunch. Serve immediately.
