Ingredients

  • 2 Salmon fillets
  • 1 cup Quinoa
  • 2 cups Water
  • 1 teaspoon Turmeric powder
  • 1 tablespoon Fresh ginger
  • 2 tablespoons Olive oil
  • 5 ounces Spinach
  • 1 Lemon 1 Lemon
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Black pepper

Instructions

  1. Rinse quinoa and cook according to package directions using 2 cups of water. Stir in turmeric and grated ginger during the last 5 minutes of cooking.
  2. While quinoa cooks, heat 1 tablespoon of olive oil in a skillet over medium heat. Season salmon fillets with salt and pepper.
  3. Place salmon fillets in the skillet and cook for 3-4 minutes per side, or until cooked through.
  4. Add spinach to the skillet during the last minute of cooking the salmon. Toss to wilt.
  5. Fluff cooked quinoa with a fork. Divide quinoa between two plates. Top with cooked salmon and spinach.
  6. Drizzle with remaining olive oil and fresh lemon juice. Serve immediately.
