Soothing Salmon with Turmeric-Ginger Quinoa

- 2 Salmon fillets
- 1 cup Quinoa
- 2 cups Water
- 1 teaspoon Turmeric powder
- 1 tablespoon Fresh ginger
- 2 tablespoons Olive oil
- 5 ounces Spinach
- 1 Lemon 1 Lemon
- 0.5 teaspoon Sea salt
- 0.25 teaspoon Black pepper
Instructions
- Rinse quinoa and cook according to package directions using 2 cups of water. Stir in turmeric and grated ginger during the last 5 minutes of cooking.
- While quinoa cooks, heat 1 tablespoon of olive oil in a skillet over medium heat. Season salmon fillets with salt and pepper.
- Place salmon fillets in the skillet and cook for 3-4 minutes per side, or until cooked through.
- Add spinach to the skillet during the last minute of cooking the salmon. Toss to wilt.
- Fluff cooked quinoa with a fork. Divide quinoa between two plates. Top with cooked salmon and spinach.
- Drizzle with remaining olive oil and fresh lemon juice. Serve immediately.
