South Beach Lemon-Herb Baked Salmon with Asparagus and Cherry Tomatoes

- 2 Salmon fillets
- 1 bunch Asparagus
- 1 pint Cherry tomatoes
- 1 Lemon 1 Lemon
- 2 sprigs Fresh rosemary
- 2 sprigs Fresh thyme
- 2 cloves Garlic
- 2 tablespoons Olive oil
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Wash and trim asparagus. Halve cherry tomatoes.
- In a bowl, toss asparagus and cherry tomatoes with 1 tablespoon olive oil, minced garlic, salt, and pepper.
- Place asparagus and tomatoes on a baking sheet.
- Place salmon fillets on the same baking sheet. Drizzle with remaining olive oil.
- Zest and juice the lemon. Place lemon zest and rosemary and thyme sprigs on top of the salmon.
- Season salmon with salt and pepper. Squeeze lemon juice over salmon.
- Bake for 12-15 minutes, or until salmon is cooked through and asparagus is tender-crisp.
