Ingredients

  • 2 Salmon fillets
  • 1 cup Quinoa
  • 2 cups Water
  • 1 head Bok choy
  • 2 tablespoons White Miso paste
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Ginger
  • 2 cloves Garlic
  • 1 teaspoon Sriracha
  • 1 teaspoon Sesame oil
  • 1 Lime 1 Lime
  • 2 stalks Green onions

Instructions

  1. Rinse quinoa and cook according to package directions.
  2. In a small bowl, whisk together miso paste, rice vinegar, ginger, garlic, sriracha, sesame oil, and lime juice.
  3. Place salmon fillets in a baking dish and brush generously with the miso glaze.
  4. Arrange chopped bok choy around the salmon.
  5. Bake at 400°F (200°C) for 12-15 minutes, or until salmon is cooked through and bok choy is tender.
  6. Serve salmon and bok choy over cooked quinoa. Garnish with green onions.
