Spicy Miso-Glazed Salmon with Bok Choy & Quinoa

- 2 Salmon fillets
- 1 cup Quinoa
- 2 cups Water
- 1 head Bok choy
- 2 tablespoons White Miso paste
- 1 tablespoon Rice vinegar
- 1 tablespoon Ginger
- 2 cloves Garlic
- 1 teaspoon Sriracha
- 1 teaspoon Sesame oil
- 1 Lime 1 Lime
- 2 stalks Green onions
Instructions
- Rinse quinoa and cook according to package directions.
- In a small bowl, whisk together miso paste, rice vinegar, ginger, garlic, sriracha, sesame oil, and lime juice.
- Place salmon fillets in a baking dish and brush generously with the miso glaze.
- Arrange chopped bok choy around the salmon.
- Bake at 400°F (200°C) for 12-15 minutes, or until salmon is cooked through and bok choy is tender.
- Serve salmon and bok choy over cooked quinoa. Garnish with green onions.
