Spicy Miso-Glazed Salmon with Cauliflower Rice

- 2 Salmon fillets
- 1 medium head Cauliflower
- 2 tbsp Miso paste (white or red)
- 1 tbsp Soy sauce (low sodium)
- 1 tbsp Rice vinegar
- 1 tsp Sriracha
- 1 tbsp Sesame oil
- 1 tbsp Ginger
- 2 cloves Garlic
- 2 stalks Green onions
- 1 tbsp Avocado oil
Instructions
- Pulse cauliflower in a food processor until it resembles rice.
- Heat avocado oil in a large skillet over medium heat. Add cauliflower rice and cook until tender, about 5-7 minutes.
- In a small bowl, whisk together miso paste, soy sauce, rice vinegar, sriracha, sesame oil, ginger, and garlic.
- Season salmon fillets with salt and pepper.
- Place salmon in the same skillet and cook for 3-4 minutes per side, or until cooked through. Brush with miso glaze during the last 2 minutes of cooking.
- Serve salmon over cauliflower rice and garnish with green onions.
