Ingredients

  • 2 Salmon fillets
  • 1 medium head Cauliflower
  • 2 tbsp Miso paste (white or red)
  • 1 tbsp Soy sauce (low sodium)
  • 1 tbsp Rice vinegar
  • 1 tsp Sriracha
  • 1 tbsp Sesame oil
  • 1 tbsp Ginger
  • 2 cloves Garlic
  • 2 stalks Green onions
  • 1 tbsp Avocado oil

Instructions

  1. Pulse cauliflower in a food processor until it resembles rice.
  2. Heat avocado oil in a large skillet over medium heat. Add cauliflower rice and cook until tender, about 5-7 minutes.
  3. In a small bowl, whisk together miso paste, soy sauce, rice vinegar, sriracha, sesame oil, ginger, and garlic.
  4. Season salmon fillets with salt and pepper.
  5. Place salmon in the same skillet and cook for 3-4 minutes per side, or until cooked through. Brush with miso glaze during the last 2 minutes of cooking.
  6. Serve salmon over cauliflower rice and garnish with green onions.
