Spicy Miso-Glazed Salmon with Roasted Broccoli and Shirataki Noodles

- 2 Salmon fillets
- 1 large head Broccoli florets
- 1 package Shirataki noodles
- 2 tablespoons Miso paste (white or yellow)
- 1 tablespoon Soy sauce (low sodium)
- 1 tablespoon Rice vinegar
- 1 tablespoon Sesame oil
- 1 tablespoon Ginger
- 1 clove Garlic
- 0.5 teaspoon Sriracha
- 1 tablespoon Olive oil
- to taste Salt and pepper
Instructions
- Preheat oven to 400°F (200°C). Toss broccoli florets with 1/2 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes, until tender-crisp.
- While broccoli roasts, whisk together miso paste, soy sauce, rice vinegar, sesame oil, ginger, garlic, and sriracha in a small bowl.
- Place salmon fillets on a lightly oiled baking sheet. Brush generously with miso glaze.
- Bake salmon alongside broccoli for the last 10-12 minutes, or until cooked through and flakes easily with a fork.
- Meanwhile, cook shirataki noodles according to package directions. Drain well.
- Serve salmon and broccoli over shirataki noodles, drizzled with any remaining miso glaze.
