Ingredients

  • 2 Salmon fillets
  • 1 large head Broccoli florets
  • 1 package Shirataki noodles
  • 2 tablespoons Miso paste (white or yellow)
  • 1 tablespoon Soy sauce (low sodium)
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 tablespoon Ginger
  • 1 clove Garlic
  • 0.5 teaspoon Sriracha
  • 1 tablespoon Olive oil
  • to taste Salt and pepper

Instructions

  1. Preheat oven to 400°F (200°C). Toss broccoli florets with 1/2 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes, until tender-crisp.
  2. While broccoli roasts, whisk together miso paste, soy sauce, rice vinegar, sesame oil, ginger, garlic, and sriracha in a small bowl.
  3. Place salmon fillets on a lightly oiled baking sheet. Brush generously with miso glaze.
  4. Bake salmon alongside broccoli for the last 10-12 minutes, or until cooked through and flakes easily with a fork.
  5. Meanwhile, cook shirataki noodles according to package directions. Drain well.
  6. Serve salmon and broccoli over shirataki noodles, drizzled with any remaining miso glaze.
