Spicy Peanut Noodles with Roasted Sweet Potatoes & Edamame

- 1 medium Sweet Potatoes
- 1 cup Edamame
- 8 ounces Brown Rice Noodles
- 4 tablespoons Peanut Butter
- 2 tablespoons Soy Sauce (Tamari for gluten-free)
- 1 tablespoon Rice Vinegar
- 1 tablespoon Maple Syrup
- 1 tablespoon Sriracha
- 1 tablespoon Ginger
- 1 clove Garlic
- 1 teaspoon Sesame Oil
- 1 tablespoon Lime Juice
- 2 tablespoons Chopped Cilantro
- 1 tablespoon Sesame Seeds
Instructions
- Preheat oven to 400°F (200°C). Cube sweet potatoes and toss with 1 tsp sesame oil, salt, and pepper. Roast for 20-25 minutes, or until tender.
- Cook brown rice noodles according to package directions.
- While noodles cook, steam or microwave edamame until tender.
- In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, sriracha, ginger, garlic, and lime juice until smooth.
- Combine cooked noodles, roasted sweet potatoes, and edamame in a large bowl. Pour peanut sauce over and toss to coat.
- Garnish with chopped cilantro and sesame seeds. Serve immediately.
