  • 1 medium Sweet Potatoes
  • 1 cup Edamame
  • 8 ounces Brown Rice Noodles
  • 4 tablespoons Peanut Butter
  • 2 tablespoons Soy Sauce (Tamari for gluten-free)
  • 1 tablespoon Rice Vinegar
  • 1 tablespoon Maple Syrup
  • 1 tablespoon Sriracha
  • 1 tablespoon Ginger
  • 1 clove Garlic
  • 1 teaspoon Sesame Oil
  • 1 tablespoon Lime Juice
  • 2 tablespoons Chopped Cilantro
  • 1 tablespoon Sesame Seeds

Instructions

  1. Preheat oven to 400°F (200°C). Cube sweet potatoes and toss with 1 tsp sesame oil, salt, and pepper. Roast for 20-25 minutes, or until tender.
  2. Cook brown rice noodles according to package directions.
  3. While noodles cook, steam or microwave edamame until tender.
  4. In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, sriracha, ginger, garlic, and lime juice until smooth.
  5. Combine cooked noodles, roasted sweet potatoes, and edamame in a large bowl. Pour peanut sauce over and toss to coat.
  6. Garnish with chopped cilantro and sesame seeds. Serve immediately.
