Spicy Sesame Ginger Salmon with Shirataki Noodles & Bok Choy

- 2 Salmon fillet
- 1 package Shirataki noodles
- 1 head Bok choy
- 2 tbsp Sesame oil
- 1 tbsp Ginger
- 2 cloves Garlic
- 2 tbsp Soy sauce (low sodium)
- 1 tbsp Rice vinegar
- 1 tsp Sriracha
- 1 tbsp Sesame seeds
- 1 tbsp Avocado oil
- to taste Salt and pepper
Instructions
- Rinse shirataki noodles thoroughly and set aside.
- In a small bowl, whisk together sesame oil, ginger, garlic, soy sauce, rice vinegar, and sriracha.
- Heat avocado oil in a large skillet over medium-high heat. Season salmon with salt and pepper and sear for 3-4 minutes per side, until cooked through.
- Add shirataki noodles and bok choy to the skillet. Pour sauce over noodles and vegetables and cook for 2-3 minutes, until noodles are heated through and bok choy is wilted.
- Serve salmon over noodles and bok choy. Garnish with toasted sesame seeds.
