Ingredients

  • 2 Salmon fillet
  • 1 package Shirataki noodles
  • 1 head Bok choy
  • 2 tbsp Sesame oil
  • 1 tbsp Ginger
  • 2 cloves Garlic
  • 2 tbsp Soy sauce (low sodium)
  • 1 tbsp Rice vinegar
  • 1 tsp Sriracha
  • 1 tbsp Sesame seeds
  • 1 tbsp Avocado oil
  • to taste Salt and pepper

Instructions

  1. Rinse shirataki noodles thoroughly and set aside.
  2. In a small bowl, whisk together sesame oil, ginger, garlic, soy sauce, rice vinegar, and sriracha.
  3. Heat avocado oil in a large skillet over medium-high heat. Season salmon with salt and pepper and sear for 3-4 minutes per side, until cooked through.
  4. Add shirataki noodles and bok choy to the skillet. Pour sauce over noodles and vegetables and cook for 2-3 minutes, until noodles are heated through and bok choy is wilted.
  5. Serve salmon over noodles and bok choy. Garnish with toasted sesame seeds.
